Breakfast Burritos

OK, I don't think we've ever had these for breakfast. Sometimes breakfast for dinner just hits the spot and we have either these or pancakes. Substitute ham or bacon for the sausage, although I really like maple flavored sausage in this, and throw in whatever toppings you love. I serve them with fruit and roasted potatoes for a dinner that is filling and my kids love.

Breakfast Burritos

Serves 6


  • 1 Tablespoon olive oil
  • 1 pound (450 g) breakfast sausage, your favorite flavor
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 6 eggs
  • salt and pepper
  • 1 6-pack package of flour tortillas

Suggested toppings:

  • salsa
  • cheddar cheese
  • diced tomatoes
  • sliced avocado (sprinkle on some lemon juice to prevent browning)
  • hot sauce
  • sour cream


Heat the olive oil in a large skillet over medium high heat. Add the sausage, crumbling with a wooden spoon, the onions and the bell pepper. Cook until sausage is browned and the onion and peppers are soft.

Add the eggs to a bowl and beat vigorously with a fork; season with salt and pepper (I also add a little crushed red pepper and sometimes garlic powder). When the sausage is cooked, add the eggs to the skillet. Reduce heat to medium and stir the mixture frequently, scrambling them, until the eggs are set. If the eggs are sticking to the bottom of the skillet, add a little more olive oil or butter. Set the egg/sausage mixture aside when finished. The eggs can be prepared separately, if desired.

Grab a tortilla and place it on a flat surface. Line a scoop of eggs/sausage across the bottom third of the tortilla; add desired toppings. To finish, fold in the sides first, then start to roll from the bottom up, using your fingers to keep the ingredients and the sides tucked in as you go. If it's too complicated, messy, or big, eat them as a taco! Serve with additional sour cream, salsa, or hot sauce.
