Chicken Salad Croissants

Love these for lunch! They are creamy and tangy, and I love the hunks of cheese...all on a buttery croissant. Yum!

Chicken Salad Croissants

Serves 6

Ingredients

  • 2 cups (250 g) cubed cooked chicken
  • 1 cup (115 g) cubed Swiss cheese (Emmental)
  • 1/2 cup (120 mL) dill pickle relish
  • 2/3 cup (155 g) mayonnaise
  • 1 Tablespoon minced fresh parsley
  • 1 teaspoon lemon juice
  • 1/2-1 teaspoon seasoned salt
  • 1/8 teaspoon black pepper
  • lettuce leaves
  • 6 croissants, split

Directions

In a bowl, combine the chicken, cheese and pickle relish. Combine mayonnaise, parsley, lemon juice, seasoned salt and pepper; add to chicken mixture and mix well.

Place a lettuce leaf on each croissant; top with about 1/2 cup of the chicken mixture.
