Copycat Subway Sweet Onion Chicken Teriyaki Sandwich

Copycat Subway Sweet Onion Chicken Teriyaki Sandwich

Serves 4-6

Ingredients

  • 1 pound (450 g) boneless, skinless chicken breasts or tenderloins
  • 1/4 cup (60 mL) soy sauce
  • 3/4 cup (180 mL) orange juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/2 teasoon dry mustard
  • 1/4 teaspoon pepper
  • 1/4 cup brown sugar
  • 2 Tablespoons (30 mL) honey
  • Buns or baguettes for serving (I use half of a baguette, sliced in half lengthwise--approximately 5-6 inches)
  • Various additional toppings: lettuce, cheese, tomatoes, peppers, onions, olives etc.

Directions

Bring all the marinade ingredients, soy sauce through honey, to a boil in a small sauce pan. Reduce the heat to a simmer and cook for about 5 minutes or until slightly reduced. Allow to cool.

Slice or dice the chicken to your liking, or leave tenderloins whole if you choose.

Pour the sauce over the chicken and let marinade for 30-60 minutes. Remove the chicken from the marinade (discard) and grill or sautee the chicken over medium to medium high heat until cooked through, using caution not to burn the glaze.

Divide the chicken evenly among bread and add desired toppings. Drizzle with Sweet Onion Sauce.
