Smoked Turkey Wraps

I love hummus. I'm pretty sure I would eat it off a car bumper. OK, maybe not, but using it as a condiment in a wrap is all right with me! This is perfect for a hot summer night, tailgating or other sports party, or for a busy night's dinner. Serve it with some french fries, pasta/potato salad or coleslaw and some fruit.

Smoked Turkey Wraps

Makes 6 wraps


  • 6 sun-dried tomato-basil or spinach-herb 10-inch tortilla wraps
  • 1-7 ounce (200 g) container roasted red pepper or other flavor hummus
  • 3/4 pound (340 g) very thinly sliced smoked, cracked-pepper, Salsalito, or other spicy turkey
  • Boston or Bibb lettuce leaves, washed and dried
  • 1/4 red onion, thinly sliced
  • 2 tomatoes, thinly sliced
  • 12 slices bacon, cooked crisp
  • salt and pepper


Heat each tortilla for about 10 seconds in a hot skillet or in the microwave.

Spread each tortilla with hummus leaving a one inch edge all around. In the center of the tortilla, place some smoked turkey, a lettuce leaf, a couple of onion slices and two tomato slices. Top with two slices of bacon and a sprinkle of salt and pepper.

Fold in each side of the wrap, then roll tightly from the bottom. To serve, cut each wrap into halves or thirds.
